Hi there, my name is Laura Bennett, and I’m so happy you’re here. I’m a registered dietitian and a passionate home cook from Bellingham, Washington. I created Quick Simple Dishes to help everyday people make quick, healthy meals without stress. Life can be full and busy. I know what it feels like to stand in the kitchen, wishing dinner would make itself. You’re not alone, and I’m here to help.
This blog is a space where you can find food that fits your life. If you want simple meals that taste good and support your health, you’re in the right place. Everything I share is tested, trusted, and made with care. Because cooking shouldn’t feel like a chore. It should feel like comfort.
Who I Am
Laura Bennett, Registered Dietitian and Home Cook
Let me tell you a bit about myself. I’m Laura, a middle-aged woman who juggles motherhood, work, and a love for real food. Growing up, I was lucky to have a family that cared about mealtimes. We always sat down at the table, even when life felt messy and full. Those dinners gave me more than just a full stomach—they gave me a sense of peace, joy, and connection.

As I got older and life became faster, I found myself struggling to maintain that same rhythm. Between raising kids, staying on top of work, and caring for others, cooking started to feel overwhelming. I often asked myself: how can I make good food without spending all night in the kitchen?
That question led me down the path to becoming a registered dietitian. I didn’t just want to cook—I wanted to understand food deeply. I wanted to know how meals could keep us healthy, strong, and happy. Since becoming a dietitian, I’ve worked with people from all walks of life. And I’ve learned this for sure: everyone wants to feel better, eat well, and have more time with the people they love.

With this blog, I combine my knowledge as a dietitian with my real-life experiences as a busy woman, mom, and home cook. I share meals that are simple, balanced, and totally doable. No stress, no guilt, just real food that makes sense in real life.

My Mission

My mission with Quick Simple Dishes is to make healthy food easy and inviting for busy people. I believe in meals that are both good for your body and warm for your soul.
Cooking does not have to be perfect. It doesn’t have to look like a magazine or take hours to make. What matters most is how it makes you feel. I want to help you feel proud of what you make, even when you’re short on time or energy.
I care about showing you that eating better can feel simple. You don’t need to turn your life upside down to feed your family well. You just need helpful recipes, a little support, and someone rooting for you in your corner. That’s the heart behind everything I write and share here. I’m not just giving you instructions, I’m giving you my support.
My Vision
My vision is to create a world where people feel excited to cook at home—not scared of it. I want this blog to build confidence, spark joy, and offer real solutions.
I picture more homes filled with the smell of something delicious on the stove. I picture parents cooking small meals that make their children smile. I see couples learning something new together in the kitchen. I picture young adults gaining the freedom to cook for themselves. I imagine this blog being part of that change.
I don’t want this to be just a recipe blog. I want Quick Simple Dishes to be a place where people feel welcome. A place where cooking is not about perfection, it’s about feeling good, saving time, and showing love through food.
In the long run, I hope to build a community that shares, supports, and grows together. A space that makes life feel just a little bit lighter and a little bit warmer.
